Magic Bean Cake
It occurred to me recently that I have never posted my recipe for Magic Bean Cake on this blog. I posted this infamous recipe on the Thermomix Recipe Community back in 2011 when I was enjoying my Thermomix Consultancy as part of my consultant challenge.
I am very proud of this recipe as it took many attempts and experimentation to get it just right. I am also proud that it is the “most viewed recipe” on the Australian Recipe Community and won “Recipe of the year” in 2012 with over 69,500 hits!!**
I have also made a non-chocolate version with orange – find the recipe here. So I will stop blowing my own trumpet and get on with it! If you haven’t made this cake yet – do it now! It is full of goodness and flavour and fun – and it makes people smile!!1 x 450g can kidney beans – drained and rinsed 1 tablespoon water or coffee (the coffee will bring out more intense chocolate flavour) 1 tablespoon vanilla extract 70g cocoa powder 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 125 g butter, softened 100g sugar 5 eggs
Beat the butter and sugar SP 5 30 seconds. Add the beans, water/coffee, 1 egg and vanilla until smooth on SP 7.
Add the remaining eggs & beat for 20 seconds SP 4. Add the cocoa powder, baking powder, baking soda, and salt and blend SP 4 10 seconds. Pour batter into prepared pan and bake MOD oven for 40 – 45 minutes or until a toothpick inserted in the middle comes out clean.
In the picture above, I have buttered the tin and sprinkled some flaked almonds before pouring the batter. Pretty, isn’t it!
** UPDATE : I’m rather proud to say that as of 1st January 2016, my recipe still remains the top most searched recipe on the Thermomix Recipe Community website. It has been copied & replicated over and over, in fact, you will find at least 8 different renditions of it on the same site. (Many using my same photo…..)
