Prune & Coffee compote

This recipe is so simple it’s a crime! It uses one of my favourite ingredients, prunes and another that I avoid; coffee. I love coffee but it doesn’t love me. I have a caffeine sensitivity so severe that even chocolate keeps me awake. And green tea. Especially cacao nibs!! I love the flavour of coffee and who can resist the smell?! I love iced coffee and don’t talk to me about tiramisu……

I was intrigued by this recipe when I saw it here. A further Google search uncovered multiple renditions of the same thing. Apparently prunes and coffee go well together, who would have thought?! Try this and see.

300g brewed coffee (I used strong dandelion root tea – tragic but true)
2 tabs honey
1 star anise
2 cinnamon quills
1 piece of orange rind
250g organic pitted prunes

1 tab cacao nibs for sprinkling – you could use slivered almonds but cacao nibs make all the difference!

Bring all ingredients to a boil on the stove then simmer for 10 – 15 minutes until reduced by half. Cool to room temperature and serve on yoghurt with some shortbread on the side! This is so yummy and makes a very elegant dessert for a dinner party.
