Raw Caramel Sauce

This recipe is so simple it’s ridiculous!! It makes a beautiful silky smooth caramel that’s full of nutrients, enzymes & protein and is free of dairy, refined sugar and gluten. It’s even vegan but don’t mention it to anyone! I know it looks a bit like peanut butter, but the mottled appearance is from the dates. I used half coconut oil and half butter to give it a butterscotch flavour but you could even use macadamia or almond oil if you didn’t want to use coconut oil.

200g dates soaked in 200g hot water for 30 minutes
100g coconut oil or butter (or a mix if you don’t mind dairy)
45g nut butter (I used almond)
seeds of half a vanilla bean, scraped
1/4 teas salt
50g water, (optional, depending on how runny you want it)
1 teas stevia (optional)

In the TM, add all of the ingredients, including the soaking water and blitz on SP 9 for 1 minute. Scrape down and repeat. You want it really smooth. Taste for sweetness and consistency and add some stevia and/or water if desired. Yummo! Serve with ANYTHING!!

Incidentally, if you want to lightly cook this, you will intensify the flavour and thickness. It does change the texture to be a bit grainy though. As it is raw, right, it is silky smooth and very light. If you use macadamia oil, it will be a lot runnier.

    Just to let you know I am making this again – don’t have time for the apple and berry pie I was going to make – this is my fabulous go to quick and easy recipe. Just serving it with icecream tonight but I am thinking that I am going to do a caramel tart with cashew cream on top as some stage soon…….

    This is delicious! I have just made some in preparation for breakfast – serving it with a coconut tapioca pudding along with chia seeds and banana. But now I am eating it with icecream and macaedamias………!

      OMG, what will you think of next!! I just sandwiched some choc chip biscuits together with the last of mine. Now I have to make another batch!!!
