Tomato chutney in the making

My friend Lizzie, makes the best tomato chutney and tomato sauce (ketchup). It is so good that my husband and I lay in bed at night plotting how to break in to her house and steal the rest of her stash! It is her mother’s recipe, or her mother’s, mother’s recipe and she makes it every year when the tomatoes are $5.00 a box from the market. Luckily for me, I am on her list of recipient friends and manage to score a bottle of each.

But today…. we ran out… (:-o) and the boys were asking “where is Lizzies fantastic chutney?” I knew the stock was low and (being time poor at the moment), had been contemplating a purchased version but just couldn’t face the anticlimax!! But silly me, I just needed to make the effort and throw a few things into the Thermomix and voila! I made it low sugar – you’d be amazed at how much sugar is in these sauces – not nearly as good as Lizzies, but a passable imitation and wayyyyy better than anything off the shelf.

1 teas mustard seeds
1 teas coriander seeds
1 teas fennel seeds
1 teas allspice
2 onions
2 sticks celery
3 apples, cored & quartered
4 cloves garlic
800g tomatoes
2 tabs tomato paste
2 bay leaves
170g apple cider vinegar
200g rapadura sugar
1 tab salt
100g water
120g dates or prunes
Roast the spices on VAROMA temp, SP 1 for 8 minutes. Mill on SP 9 for 10 seconds and then add the garlic, onion, celery and apple and chop for 5 seconds, SP 6.
Add the rest of the ingredients and cook on 100ºC, SP 1 REVERSE for 40 minutes with the MC off. Check for seasoning and bottle while hot.
