Sugar Free Easter Yum….

So it broke my resolve….. being surrounded by bloody Easter eggs and chocolate-scoffing people just got the better of me…..so I did what I do best and compromised in the best possible way.

I am proud that I still avoided the Cadbury eggs, and the Lindt bunnies, and the hot cross buns (though, I did make them for the tribe). I made a chocolate cake based on my Paleo philosophy – veges, no sugar, no grain – sounds wonderful, doesn’t it!! YES, IT IS, belieeeeeve me!! I dare you to try it and see. Happy Easter everyone!!

200g zucchini
80g rapadura sugar (or xylitol)
8 drops of stevia
4 eggs
90g butter or coconut oil
10g cocoa
35g coconut flour
1 tab arrowroot or cornflour
1 teas baking powder
1 teas bicarb soda
40g chocolate chips or cacao nibs (optional)
 
Chop the zucchini finely on SP 6, 4 seconds. Add the sugar, butter, eggs & bicarb/baking powder, and mix on SP 4, 5 seconds. Add the flours & cocoa and mix for 5 seconds, SP 4. Stir through chocolate chips and bake for 35 minutes MOD slow oven.

    This is a fab post, thanks for the idea and it looks beautiful. We have been getting exited about easter and we love everything to do with baking. You might like our recipe for a bit of a traditional English roast lamb lovely for a Easter lunch.

      Thankyou! I had a look at your site and think it is wonderful too. I am heading over to NY in 2 weeks so will try and drop in – we are only there for the weekend tho. Are there recipes for the cadbury cream egg ideas? I love them!

    I don’t know if you have been asked before, but can you make your own coconut flour in the thermomix from dessicated coconut?
