Roasted Pumpkin & Feta Dip

OK, you lot… While you are feasting on hot cross buns, and preparing yourself for a big chocolate-fest tomorrow, I am cleaning out my fridge, using up all the bits which need to be used up!!!

Some call this a fridge dinner, or pantry dinner, I call it stock control!!

So I had, a bit of pumpkin, feta & cottage cheese but no salad, so I decided to make this yummy dip – YES, yummy dip!! You’ll be hankering for some healthiness after this weekend so give it a try…

300g roasted pumpkin – I used butternut with skin on
100g feta
100g yoghurt
100g cottage cheese
pinch salt (or to taste)
few sprigs of dill
splash of apple cider vinegar or white balsamic
1 tab pepitas
In the TM whiz up on SP 6 for 10 seconds. Thin with a little water if necessary. Garnish with cracked black pepper and extra pepitas.
