Pizza Paleo Fail

Tonights Paleo Pizza

Sorry to disappoint, but this looks better than it tastes. You may recall that I have been searching and testing lots of paleo friendly pizza bases and there has been much published on the Paleo trail about bases made with coconut flour. Unfortunately, contrary to most comments online, they taste pretty ordinary: more like a pancake rather than anything else. And efforts to take away the sweetness by using salt & garlic, are fruitless, with the end product just tasting garlicky sweet!

If you want to see for yourself, or think you can improve on it, here is the recipe. Let me know how you go….

3 eggs
1/2 cup coconut flour
1/2 teas bicarb soda
3/4 cup milk (cow/coconut/almond)
1 clove garlic

Blend for 10 seconds on SP 8.
Let stand for 5 minutes and then spread on a circle of oiled baking paper. I dry fried mine in a frying pan for about 10 minutes on each side on a medium heat. When cooked,  spread with desired toppings and then grill until brown.

    I have also tried countless “Paleo pizza” ideas that have left me wanting. Something always goes wrong with the crusts. 😦 However, something that does work very well is to use large portabella mushroom caps as the “crust” and then layer on your toppings. Just make sure to cook the portabellas for 8-10min before adding the toppings so that some of the excess water is cooked out.

      Thanks Nikki. I tried this tonight and whilst it was very yummy it felt more like a stuffed mushroom than a pizza. I am still working on it and will let you know!!
