Creamy Pesto Penne with Roasted Tomatoes & Hot Smoked Salmon

It was one of those nights when I just couldn’t be bothered cooking… Just as well I had a batch of pesto in the fridge! This meal took 23 minutes from the time I motivated myself to the kitchen to sitting down at the dinner table.

First I put my TM onto boil with 2 litres of water. 10 minutes

Then I halved some tomatoes and put them in a hot oven with a sprinkle of EVOO and balsamic vinegar, salt & pepper. 2 minutes

Added my pasta to the TM and cooked for 12 minutes.

Drained the pasta in my Varoma bowl and stirred through a generous helping of homemade pesto. 1 minute

Pulled my tomatoes out of the oven and remembered I had some hot smoked salmon in the fridge and added a bit to garnish! Yum!
