Tuna Dip

Since giving up sugar and grain, I have discovered another vice… Salted Cashews.. it is little wonder why I have not lost much weight given my propensity to gorge myself on these moreish delights. All the more better if they are mixed with my cumin spiced chilli almonds (more on those later) and wasabi peas!! Even my brother was found foraging in the cupboard for my “special mix” late one evening on a visit recently.

So I decided that when the last batch of my “special mix” was gone, I would not replenish it and find another, healthier alternative.

So I looked through the Thermomix Everyday Cookbook and decided on the Tuna Dip. Here is my variation of it; a little lighter & brighter, me thinks…

A handful of parsley
1 spring onion
Juice of half a lemon
250g ricotta
80g mayonnaise
180g can of tuna (or pink salmon)
6 semi dried tomatoes
50g walnuts or pecans
1/2 teas sumac
Salt & Pepper to taste

Chop parsley & spring onion for 5 seconds on SP 6

Add rest of ingredients and mix for 10 seconds on SP 4 – 5. Throw in nuts in the last few seconds so that they are not too finely chopped. This works if you use a small 95g can of tuna also.
